This site alone probably won't find enough Chicago area folks to make a workshop possible. People who post here are from all over the world, which is really great, but harder to get to a physical gathering. 
The workshops I've seen develop also connect with an on-going compatible group in their area which will provide some of the organizing needed. Have you read the three workshop articles listed across the top of this page? If you decided what you could help with and then went to a consciousness/afterlife Chicago group and asked them if they'd be involved for the rest, I bet you'd have workshop put together very quickly
